
Reuben Acheampong is a dedicated Food and Nutrition Specialist with extensive experience in research, training, and community engagement. He is currently pursuing a Ph.D. in Food Science, focusing on the characterization of Bambara groundnut starches for improved nutrition and functionality, at the University of Ghana. He holds an MPhil in Family and Consumer Sciences, specializing in Community Nutrition and Food Utilization, and a BSc in the same field, demonstrating a strong subject matter expertise.
Reuben has served as a Principal Expert Trainer and Nutritional Consultant on numerous projects, including the development of training manuals on food safety, nutrition, and food processing. His work has involved leading workshops, conducting nutritional testing, and engaging communities in dietary education. With a background in teaching at the university level, he has developed expertise in curriculum design, delivery of life skills, and data-driven nutrition education. His experience with institutions like Nestlé Ghana Ltd., and roles in international organizations highlight his capacity to integrate nutritional science into practical training for community impact.
